  Men in the Kitchen 1
 
A men only course for Gents who would like to learn to cook or who lack the confidence to expand their current repertoire. The day focuses on good basic techniques and skills as well as introducing you to the lingo of the cookery book. By the end of the day you should have the confidence to use your own judgement and skills to produce a range of interesting, tasty family dishes. You will also take home a pack of recipes and a couple of dishes to feed two.

Type of dish cooked include Vegetable Soups, Toad in the Hole, Frittata, Crumbles with Lasagna and Sticky Toffee Pudding to take home.

A men only hands on class which builds on the skills learned in Men 1. Also suitable for gents who can cook a little and who would like to expand their skills base and repertoire. A one day hands on course aimed at inspiring those who lack confidence in the kitchen or who wish to expand their current repertoire. This day aims to demystify simple fish cookery as well as to inspire you to expand your repertoire. The day will involve both demonstration and hands on sessions. You will work with types and cuts of fish that are readily available in shops and fish mongers. You will learn a range of cooking techniques and methods as well as serving suggestions and sauce accompaniments. You will taste everything demonstrated and prepare a delicious lunch to enjoy together before leaving inspired for home. Types of dish cooked include Salmon Fillets with Orange and Saffron Sauce, Smoked Fish Crumble or Gougier, Chermoula Spiced Prawns and Sichuan Spiced Squid.

  Knife Skills
 
Knives are the most vital tool in the kitchen and using them correctly can make the difference between being an ok cook and a really good cook. Yet how many of us know which knife will suit and how to look after it, let alone how to begin to slice and dice like those bods on the TV. During your day with us we will show you what to look for when purchasing a knife as well as how to care for it. You will learn which knives to use for which task and we will demonstrate a number of options for caring and sharpening your knives. During the practical session you will dice, slice and chiffonade your way through a range of vegetables, herbs and fruits. The tutor will be on hand to help you correct your technique.

The items prepared will be turned into a delicious lunch by our staff for you to share together before the completion of the course. All recipes cooked will be incorporated into the course pack.

  Knife Skills 2
 
this class is no longer running - we can offer as a private lesson if you would like to register your interest by e-mail. Adding to your repertoire we will look at jointing and boning a range of meat products. You will be shown how to prepare both a white and a brown stock for use in cooking and reduction sauces. The meats prepared will be cooked using a range of methods from slow cooking and poaching to pan frying and griddling. Different cuts and cooking methods will be discussed throughout the day. In the afternoon a local butcher offers a lively demonstration and discussion session.

  Fish and Shellfish
 
During this action packed day you will learn how to deal with a range of fish and shellfish from scratch. You will learn to fillet both a round and a flat fish (learning to gut and de-scale is also an option). There will also be a seasonal range of crustaceans and shellfish (depending on what is available). The preparation session will be followed by both demonstration and practical sessions to turn the prepared fish into simple and tasty dishes which we will sit to eat together before the session ends.

An inspiring day preparing desserts with a difference to pep up your entertaining repertoire. A combination of demonstration and hands on experience, you will sample everything prepared and have a little something to take home at the end of the session. The menus are seasonal and desserts prepared will reflect this and be different on each session. Style of dessert prepared have included: raspberry souflee, ginger and chocolate roulade, french style summer fruit tarts, framboise and basil fruit jellies, choclate pithiviers. A light lunch will be provided.

A day designed to introduce the enthusiast to the flavours and cooking methods from original spice growing regions and trading posts from China and Indonesia to Sri Lanka. South America and the Caribean. Sample of dishes prepared mihgt include: Sichuan aubergines,hot and sour soup, Sambal Goreng, Kerelean Garam Masala,baked Mexican peppers, steamed coconut bread. We source genuine spices and ingredients and have a range of superb recipes sourced from classical books and world renowned chefs. The sessions are aimed at those interested in food and ingredients. We begin with an introduction to the spices and ingredients to be used. We then work together with demonstration and instruction to produce the basics for the meal. This will involve the preparation of spice pastes, marinades and vegetables required to cook the meal. You will then work in pairs or small groups to prepare a dish or two after which we come together as a group for a final demonstration and practical before sitting down to enjoy a feast of fragrances and flavours along with a glass of wine or an appropriate beverage. Classic French Bistro cuisine with influences from the Mediterranean and the Far East make for simple, flavoursome and sometimes robust dishes which can easily be reproduced at home. With a combination of demonstration and hands on cooking we will prepare a number of dishes to share at lunch time over a glass of wine. Post lunch there will be a short demonstration session to complete your day. A day for the enthusiastic cook and foodie. The menu for these sessions changes according to the seasons so if you have enjoyed one you can return to enjoy another day with us. Working with fresh and seasonal ingredients and preparing our own stock for use in the sauce bases, you will be guided through demonstration and practical sessions to produce a fabulous meal. These sessions are often given as gift vouchers and so we have changed the format of the day to allow you to invite the voucher giver, a friend or partner along to enjoy the meal with you (£20 additional cost).
