Inspired Entertaining
Inspired yet simple dishes for entertaining: This day will give you the confidence and inspiration to entertain with flair. The day will be a combination of demonstration and hands on experience to ensure that you leave with some well honed skills as well as host of new ideas. Built into the day will be discussions on how to plan different styles of party and balancing the menus. The course runs throughout the year and menus change with the seasons.

Just Desserts
An inspiring day preparing desserts with a difference to pep up your entertaining repertoire. A combination of demonstration and hands on experience, you will sample everything prepared and have a little something to take home at the end of the session. The menus are seasonal and desserts prepared will reflect this and be different on each session. Style of dessert prepared have included: raspberry souflee, ginger and chocolate roulade, french style summer fruit tarts, framboise and basil fruit jellies, choclate pithiviers. A light lunch will be provided.

The Italian Kitchen
A busy day learning to prepare fresh pasta, sauces and a range of exciting Italian dishes. The day is a combination of demonstrations and practical sessions preparing family style seasonal Italian dishes which we sit down to eat with gusto before the session ends. The session is suitable for individuals as well as family groups and lends itself very well to the vegetarian cook. Type of dish cooked on this course include fresh pasta and sauces, Vegetable sformatto, Chicken with Lemon and Olives, Chocolate Amoretti Cake, Zabaglione, Balsamic Roasted Strawberries and Biscotti. Flavours of the Med
Mediterranean Cooking has much to offer in terms of health and pleasure. The strong gutsy dishes of the winter mellow and develop in the warmth of the summer months. A combination of demonstration and hands on cookery, this course will familiarise you with the variety of different ingredients, herbs, flavours and styles of cooking from Mediterranean counties. once again the sessions are seasonal allowing you to expereince both winter and summer style dishes such as: Gutsy Ribiolitta and rognons du veau, pissaladier, pine nut and honey tart.

The Spice Route
A day designed to introduce the enthusiast to the flavours and cooking methods from original spice growing regions and trading posts from China and Indonesia to Sri Lanka. South America and the Caribean. Sample of dishes prepared mihgt include: Sichuan aubergines,hot and sour soup, Sambal Goreng, Kerelean Garam Masala,baked Mexican peppers, steamed coconut bread. The day will be a combination of hands on and practical. There will be opportunities to taste throught the day as well as enjoy some dishes for lunch together.

Bistro Cook
Classic French Bistro cuisine with influences from the Mediterranean and the Far East make for simple, flavoursome and sometimes robust dishes which can easily be reproduced at home. With a combination of demonstration and hands on cooking we will prepare a number of dishes to share at lunch time over a glass of wine. Post lunch there will be a short demonstration session to complete your day. Dishes cooked on past courses include Double Fried Chips, Mussels in a Fennel Broth, Pave of Cod with Tapenade, Supremes of Chicken with Sundried Tomatoes and Lemon Tart.

Inspired Entertaining - Saturdays
A day for the enthusiastic cook and foodie. The menu for these sessions changes according to the seasons so if you have enjoyed one you can return to enjoy another day with us. Working with fresh and seasonal ingredients and preparing our own stock for use in the sauce bases, you will be guided through demonstration and practical sessions to produce a fabulous meal. These sessions are often given as gift vouchers and so we have changed the format of the day to allow you to invite the voucher giver, a friend or partner along to enjoy the meal with you (£20 additional cost). After lunch you will both be able to enjoy an inspiring demonstration before departing.
